An aspect of Australia that never fails to surprise me is how very green certain parts of the countryside can be – the eastern coast of New South Wales in particular. If you venture out just west of Byron Bay, you’ll find yourself in the lush green rolling hills of the Hinterlands. Where the grass is so green, you might almost mistake it for Irish countryside. Everybody is relaxed, mellow, friendly. Even the cows.
